The manufacturing process commences with the mash, that is mixing in the mash tun the various primary ingredients namely water, drawn from the two wells situated in the abbey grounds, the malt (germinated and kiln dried barley)and wheat or starch.

So that the grain starch can be converted into fermentable sugars, the liquid mass is then heated to certain temperature levels.

This first stage lasts for about one and a half-hour.
